How to cook Chicken Biriyani?

Biriyani is one of the scrumptious dishes in India. 

Folklore goes it was initially brought on by the Mughals who came back in the 13th century.

Since then it has become the most popular dish in the Indian subcontinent. Now wherever you look in every corner of this country has a biriyani shop. Although every state has its own style Biriyani to offer you such as Hyderabadi Biriyani, Lukhnow Biriyani, Kolkata Biriyani, and so on. But making a Dum style Biriyani one has to follow the same pattern which has been followed for centuries.

Authentic Traditional Dum Biriyani has many layers in it.

Today I will tell you that how cook Chicken Biriyani at home like the one you order from Zomato or Swiggy.


Ingredients:

1. We need 1 Kg Chicken, clean the fresh chicken and draw a few slits on each piece, and put it in a bowl. 

2. Now add 4 tablespoons Dahi. Two tablespoons Ginger paste, Two tablespoons Garlic paste in it.

As per your choice, you can add either Garam masala or Biriyani masala.

Add 1/2 tablespoon salt. 1/4 tablespoon turmeric powder, 1/2 spoon of red chili powder ( as you like) and add 1 tablespoon of vinegar.

3. Now mix all of them evenly and keep them aside for 1 hour. Remember the more you give it time to get marinated the chicken becomes softy. 


To prepare the Rice, take 3 cups basmati rice and rinse it well, at least 3 to 4 times. Now drain the water and soak it in freshwater for another 30 minutes. Now drain it in a colander. 


To give the biriyani a royal color, soak a little bit of saffron in half f cup of hot milk.


Here is the most important part, cooking chicken,

Now heat 4 big spoons of Ghee or oil in a pressure cooker,

Add 2 bay leaves,

5/6 cardamoms,

6/7 cloves 

2/3 cinnamon  pieces

1 spoon of strand mace.

Chop 2 onions thinly.

Now stir them on medium heat till the onions turn a little brown. You will understand by seeing the color of onion, Don't over fry it, it might cause a bitter taste. So keep an eye on that. Add the marinated chicken and saute it for 6/7 minutes. If you feel it needs Little water add a little water and cover it, let it be cooked. It takes approximately 20/25 minutes to turn the chicken soft. To make sure whether it is cooked or not prick it with a fork. Don't overcook the chicken else the flesh part will be apart from the bones. 

Now once you are sure with the cooked chicken add well-chopped coriander leaves and mix with properly. 

Once you're done with the chicken get the drained rice all over the chicken.

 Now get 2 cups of boiled water and add a pinch of salt to it. Add the water across the sides of the cooker and on the rice as well. 

Add the saffron milk which you've already prepared. Finally cover the pot on medium heat until the rice is cooked completely. If you feel the rice needs water, add 1/2 cup of boiled water. Don't add normal water. Now keep the pot or cooker aside and don't open it for 15 minutes. 

So we have prepared our chicken Biryani already but before you're going to gulp it adds thinly fried onions on the whole biriyani. Ready. You are ready to serve or gulp on your own the delicious Royal Biriyani.
